Well, yeah, a lot of the stuff in Cooking Light looks hard, but some of it is kinda basic, like this stuff. And, I know, I’m not sure what’s up with my potato and cheese issues.

From what Darren says about that publication, it does not sound like it's beginner-friendly.<br/><br/>Also, I am with you on the chicken in lieu of red meat thing (also for no particular reason), but I will never, ever, EVER understand your aversion to potatoes and cheese.
